Graham-Crusted Tilapia

Notes: This is delicious!! I made half of the recipe because I only had 2 small tilapia.  I also used the box of cracker crumbs rather than the squares.  I didn't toast the pecans either.  I put the dry ingredients in one pie plate and the liquid ingredients in another pie plate. That gives you enough room to coat the fish.

Back to School Pencil Cookies

Notes: What fun! These are co cute and very tasty too! I'll admit-they are very time consuming. I made mine on a Sunday when I had plenty of time. I had some leftover yellow buttercream icing so I used that rather than the royal icing.  I didn't follow the exact order on the recipe but it still came out fine. It might be fun to try and find something to make the tin foil end out of that is edible.  Enjoy!

Chocolate Apple Bread

Notes: This is super easy. I actually used an apple that one of my kids brought me at school for this recipe!! I baked it for 55 min. (I always bake for the lowest time and then add more if necessary). It has a good mix of apple, chocolate chips and walnuts. Enjoy!

Notes: This was very tasty and had a great chocolate flavor! It is time consuming but well worth it. I made this for one of my teammates at school and it was a big hit.  The above recipe isn't exactly the one I had but very similar. I recommend a cake leveler to level it even and I cut mine on a cake board as well.  Try this for your next birthday-you'll love it!

Garlic (Pesto) Shrimp Linguine

Notes: This was very tasty! The shrimp was well seasoned.  I used water in place of the white wine, and dried parsley in place of the fresh and it was still wonderful! There wasn't enough juice for me, so I mixed in a package of pesto and that gave it even more flavor.  I highly recommend this dish, especially if you're looking for a quick, healthy meal! Enjoy!

Easy Garlic Broiled Chicken

This is a 2 pan meal! Who doesn't love that on a busy night?! Grab some chicken thighs and a few spices and you are good to go! Click here for this quick and easy recipe. 


Notes: I used a broiling pan-one with a rack where the meat doesn't touch the bottom and get lost in its own juices, and I used a good amount of cooking spray so the skin didn't stick to the pan. Unfortunately the chicken wasn't quite done in the allotted 20 min. I started broiling on high, then turned it down to low because the garlic was starting to burn. I ended up throwing it in the oven on 350 for another 10 minutes, so if a recipe doesn't quite work out for you the first time, adjust adjust adjust! Enjoy!

Back to School Cake

It's back to school time again! What better way than to start with a school bus cake! Of course, I personalized it with the name of my school on it and you can do the same. Click here for this fun recipe!
Notes: This was super fun to make! I definitely recommend leveling the cake before you ice it. I also highly recommend crumb coating it before putting on the final layer of icing. Just put some icing on it, it's ok, it doesn't have to be neat-then throw it in the freezer for about 30 min. This makes it SO much easier to ice the cake! I also used my own buttercream icing recipe so feel free to use your favorite as well.  Enjoy!
