Looking for something small, light and tasty for breakfast? Check out these mini frittatas. They are quick and easy and just what you're looking for!
Thoughts: Very tasty and easy to make! If doing half the recipe, use the 24 cup mini muffin tin once and 1/4 cup diced ham. The 4 ounces of diced ham the recipe calls for is about 1/2 cup. Be sure and spray the muffin tins really good. The rubber spatula is the best way to remove them from the tin. This recipe is also good with diced turkey. They were a big hit at our school staff breakfast. Enjoy!
This is about my many experiences in the kitchen. I will share my cooking and baking recipes as well as hints and tips. Please feel free to send some recipes or post any ideas you may have about anything in the kitchen. Thanks and happy cooking!

Granola Sweet Rolls on a Stick
Here's another new twist on cinnamon rolls! Why not add some banana, put them on a stick and bake them! Click here for this delicious recipe.
Thoughts: These are very tasty! I used the can of 8 cinnamon rolls rather than 5. I ended up using 2 cookie sheets because I had 8 rolls. I also used pie plates for the yogurt and the granola. I find the shallow dishes easy to dip food in. You can either serve the yogurt sauce as a dip, or drizzle it on as I did. Enjoy!

Mini Cinnamon Crescents
I am a huge crescent roll fan and am always on the lookout for a new recipe. I also like things "mini" to make me feel like I'm eating less! Click here to enjoy this chocolaty, cinnamon goodness!
Thoughts: Love these!! They are quick and easy-2 of my favorite things in the kitchen! This recipe is a bit time consuming but well worth it in the end. I substituted mini chocolate chips for the raisins because I do not like raisins. If you like them both, then feel free to add them both. It's hard to wait that 5 minutes to cool, so I just throw on some butter and eat them warm! Enjoy!

Cinnamon Roll Bites
Here's a fun, new twist on cinnamon rolls. If you're looking for a little bite, click here for this yummy recipe!
Thoughts: Very quick and easy and so tasty! This was another hit at our staff breakfast at school. Double the recipe for even more sweetness. Enjoy!

Bacon Quiche Biscuit Cups
This is perfect for breakfast! It's got your bread, bacon and eggs all in one! Click here for this delicious recipe!
Thoughts: These were a huge hit at school for one of our staff breakfasts. They are so easy to make too. Be sure and firmly press the dough into the muffin tins all the way up the sides. You can also use more bacon, but not too much because mixed with the cheese can get very salty. I also used cheddar cheese instead of swiss. Use whatever your favorite cheese is. Remove from the pan using a rubber spatula-they will slide out much easier.

Ranch Chicken
Looking for an easy chicken recipe? Try this delicious, deep fried ranch chicken. It may not be the healthiest, but it sure is tasty!
Thoughts: I used 2 large boneless, skinless chicken breasts and cut them in half. I also used Three Cheese Ranch dressing rather than just the regular Ranch. I put the dressing in one pie plate and the bread crumbs in another pie plate. (I find it easiest to dip them in glass pie plates rather than a paper plate or a plastic bag). Rather than using a skillet, I used my deep fryer and fried the chicken for about 12 min total. I only put in 2 pieces of chicken at a time as not to crowd the chicken too much. The coating was nice and crisp. I may try baking it next time, just to be a bit healthier!

Oven Baked Zucchini Sticks
Looking for another great recipe for zucchini? Click here to try these oven baked zucchini sticks!
Thoughts: Thanks to my sister-in-law for this awesome recipe! Be sure you cut the zucchini thick enough or they will burn. The coating is very tasty! When I made these the first time, I only had 1 zucchini rather than the 3 the recipe called for, so then I just "eye-balled" the dry ingredients. You can always use whatever seasonings you like or have on hand too. For the sauce (since I am not a horseradish fan) so if you aren't either I would suggest 1/2 cup mayo, 3 Tbsp. honey dijon mustard, 1 Tbsp. lemon juice, 1/2 tsp. grated lemon peel and 1 clove garlic, minced. Combine all sauce ingredients and chill for an hour. Southwest Chipotle Dressing makes a wonderful dip as well!
